Salsa Anyone?

The salsa garden shows signs of actual ripening. The princess is bouncing up and down with glee on that one! Which brings me to my next thought…. I’ve never made salsa. I’ll give you a minute to pick yourself up off the floor since I have a reputation for being able to make anything and everything. The cabana boy and the princess were kind enough to read me the ingredients off a jar. Yeah. Uhm… I had a general idea when I planted the garden that I would need tomatoes, cilantro & peppers. ;) So anyone have a good salsa recipe they want to share? If so leave it on your blog and leave a comment with a link to it! We can have an online salsa party!! B) B)

If you don’t have a blog and you still want to play, email it to me with express consent of blogging it… other wise I’m just going to gleefully make it and not share the recipe because I wouldn’t want to give away a family recipe. Nope…. not going to have granny chasing me around a kitchen with a sharp object.

DH improved on this one last year with stuff from our garden, but I don't think he wrote down the vairations. It is a good place to start!

Makes 8 servings

2 cups tomatoes chopped/diced
1/2 cup green chilies peppers or jalapenos
1/2 cup onions finely chopped
1 tablespoon vinegar
1 teaspoon sugar
1/8 teaspoon salt
1/2 teaspoon fresh cilantro

Mix all ingredients, cover and refrigerate several hours.

The cabana boy tried one of the santa fe peppers that had gone yellow with hints of red and informed me that was quite spicey!! LOL We have about 10 different kinds some sweet and some spicey to play with flavors :-)

I take one or two jalapenos, depending on the size, (I leave the seeds in at least one for the heat), put it, one or two cloves fresh garlic, sometimes a bit of onion, and put it in the blender with one small can of whole tomatoes. Chop that all up together, then I add some fresh cilantro, salt and a large can of whole tomatoes, and "pulse" the blender til I like the consistency. It's ready to eat and I refrigerate what I don't use right away. I like my salsa hot.

Thought I'd add that I use my fresh tomatoes to make a chunky, pico de gallo like salsa. I have used them in the above salsa recipe, also, but I find I don't like the flavor as well as the canned 'maters. Go figure.

Oh, I don't know if it's much, I 'spose they are both "salsas". But when I want to eat the pico like a salsa with chips, I kinda smush the tomato chunks a bit, making it kinda juicy, and I like to add some southwest seasoning, like Emeril's. I just chop up my tomatoes over the bowl, so all the juice drips in, them lightly smash them with a 'tater smasher, and stir in my chopped jalapeno, cilantro, onion, seasoning, salt, and a splash of lime.

I just realized that garlic got left out of my recipe... yikes! Lots of garlic, as much as you want :D Which is several cloves in this household lol
